Dry vine cuttings are excellent for small grills, their heat being of short duration. The most fragrant fires are made from dried Mediterranean mountain scrub and the withered shrubs of the maquis - cistus, rosemary, Jerusalem sage, lentisk - which burn with the violence of a blow-torch, produce spurts of blue and emerald fire, and a smell of incense. It is the shepherd in southern latitudes who inevitably sets the landscape on fire, the main cause of his social ostracism. He burns the maquis and mountainsides in summer to precipitate the growth of new grass for his famished flock.

So I stayed at this cabin earlier this summer. one day I woke up at 5a.m. and saw the incredible light coming through the front door. I couldn’t just let it go and fall asleep again. I set my camera up, shook some old pillows and caught this beautiful second before the wind blew all of this out.

The nature of the fire determines the procedure: you make a fire with a good draught, set between stones and oriented according to the wind, and let it burn up fiercely, fanning if necessary. When the flames have died down and the heat is at its maximum, you throw some thyme and rosemary on the glowing embers and set down the loaded grill, the meat having been anointed with oil well beforehand.

Artists have something in common with shepherds in that their means of livelihood is not apparent- they work for long periods with no prospect of gain, and others regard this as disreputable. It was a Salentine shepherd whose fire, advancing like a dragon across the wilderness where we were camping one summer inadvertently destroyed my culinary reflections on the application.
